From Hive to Home: A Range of Natural Perfection

Our 100% raw, local, Irish honey is available throughout the year. As these are seasonal some of the products, such as the pressed heather, is in limited supply and can likely run out. All the honey that is produced truly is 100%, raw, and local, being collected by Olly’s Farm honey bees from apiaries all around South Dublin and North Wicklow.

We dont buy or use any other beekeepers honey, if it’s in an Olly’s Farm branded jar it’s been made by Olly’s Farm bees and is fully tracable back to the apiary it was made. It is sold as raw honey; this means that the honey has minimal processing and is not pasteurised in any way.

Natural

raw honey

Our honey is simply extracted from the frames and cold filtered. This means it passes only through a coarse filter to remove large particles such as wax cappings or propolis. Crucially, the raw honey is never heated to make it pass through fine filters or to turn it into a clear "runny" honey like those found in supermarkets. We believe that heating honey destroys much of its natural goodness — including the enzymes, pollen, and delicate floral aromas that make raw local honey so special.

At Olly’s Farm in Wicklow, we take pride in preserving honey exactly as the bees intended — rich, textured, and bursting with the unique flavours of Wicklow’s wildflowers and heather. Each jar reflects the changing seasons and the landscape our bees forage on. Because of our gentle, cold extraction process, our honey will always crystallize naturally over time — a sure sign that it’s 100% raw and unprocessed.

We love that our honey brings people together — from beekeepers to customers to nature enthusiasts. Everyone in our community can share, taste, and learn about the craft of sustainable beekeeping and the importance of protecting our pollinators.
